THIS IS MY NEW DISH CONFIT CHICKEN , TO START YOU WILL NEED CHICKEN THIGH AND CORN OIL , SALT , BLACK PEPPER , GARLIC , BAY LEAF , THYME , AND ALSO A BIT OF SUGAR , PUT ALL THE INGREDIENTS IN A BOWL AND ADD IN THE OIL , MAKE SURE THE OIL IS COVERING THE CHICKEN , NEXT PUT THE BOWL IN THE OVEN FOR 3 HOURS AT 150 C TO SLOW COOK THE CHICKEN , AFTER 3 HOURS LET THE CHICKEN MIXTURE REST IN THE OVEN FOR 2 MORE HOURS , AFTER THAT REMOVE FROM THE OVEN AND LET IT COOL TO ROOM TEMPERATURE , AFTER THAT PLACE THE CHICKEN MIXTURE IN THE CHILLER FOR 10 HOURS OR OVER NIGHT IF POSSIBLE , AFTER THAT 10 HOURS REMOVE FROM THE CHILLER AND PLACE THE CHICKEN IN A TRAY AND ROAST IT FOR 45 MINUTES IN THE OVEN AT A 160 C OVEN TO AGAIN SLOW COOK THE CHICKEN .
FOR THE MASH SWEET POTATO JUST BOIL UP SOME SWEET POTATO AND WHEN THE SWEET POTATO IS SOFT ENOUGH , MASH IT WITH A POTATO MASHER NEXT ADD IN CREAM OR MILK AND SEASON IT WITH SALT AND PEPPER
NEXT FOR THE PICKLE RED ONION IN A POT ADD IN WITH VINEGAR AND A BIT OF WATER ADD IN THE ONIONS ADD BOIL IT WHEN THE MIXTURE START TO BOIL TURN IT DOWN TO THE LOW FIRE , SO THAT THE ONION GET THE CHANCE TO ABSORB THE VINEGAR COOK THE ONION AT LEAST 30 MINUTES AND FOR THE BROCCOLI IN A PAT ADD BUTTER AND WATER , WHEN THE BUTTER START TO MELT ADD IN THE VEGETABLE AND COOK IT FOR A FEW MINUTES ADD IN SALT AND PEPPER AND THERE YOU HAVE IT GLAZE BROCCOLI .
